What I ate this week..

Just because I am a dietitian does not mean that I eat perfectly. I thought I'd give you a snapshot of what I ate this week. I was extremely busy this week, which made for some interesting meals.

On Saturday we had some friends over and had a cookout. Per usual, I had a ton of leftovers. I am not one for throwing out foods. Therefore a lot of our dinners were based around what we had in our fridge.

Sunday was a little bit of a mess. I felt a little under the weather after the champs on Saturday. I made a breakfast sandwich for breakfast and munched on some berries while my egg cooked. When I'm hungover I like more fat, so I added some extra avocado to my sandwich! This is what a typical weekend breakfast has been looking like, recently.

For lunch I had a veggie burger topped with lettuce and tomato. I've really been into the kale burger by Dr. Praeger's. For dinner I had a large orange and some fish sticks. As you can see it was a struggle of a day! 🙈

Monday-Friday

I work full- time in a hospital, and usually eat breakfast and lunch at work. This week my whole eating schedule was off. On Monday and Tuesday morning I had some scrambled eggs, fruit, and a little bit of oatmeal topped with walnuts. This meal usually holds me over until lunch, due to its protein and fat from the eggs and the carbs and fiber from the fruit and oatmeal! The rest of the mornings I made a smoothie! In my smoothies I usually put a few frozen berries, 1/2 a banana, tbsp chia seeds, a large handful of spinach, some milk, and 1 scoop of Juice Plus+ Complete protein powder! Since using this protein powder I have been obsessed with my smoothies- they have never tasted better and it really holds me over until lunch! This protein powder is plant based, which makes me love it even more. :)

For lunch I usually try to have some type of salad, which I accomplished this week. We have a salad bar at work, which makes it very convenient! Since I do not eat meat, only fish, I topped my salad with walnuts, sunflower seeds, and chickpeas for some protein. We also have decent fish; I topped my salad with a salmon patty one day!

Dinner

This week was seriously a disaster. Monday I had a veggie burger for dinner (I told you I love them!!). Tuesday was National Pancake Day. I got home later and my husband had already ate, making pancakes for one seemed silly. I made a breakfast food swap and had some Kashi cereal topped with blueberries! Wednesday I had some baked fished and watermelon. After Wednesday we usually eat out for dinner the rest of the week. On Thursday we went to a care that is within walking distance! I love when we go there because walking after dinner is my favorite! I feel like it helps everything to settle. Anyways, they have an amazing thai tofu wrap! Every time we go there I have to get it! Friday we ate at Au Sing Den and it was amazing! They have happy hour until 7, which is hard to find on a Friday night in Austin! I had the Thai Curry Soba with shrimp and it was amazing! It was rich and full of flavor. I would highly recommend this restaurant.

As you can see, this week's theme was clean out the fridge for dinner! This was definitely not my best week of eating. Moving forward, I plan to try a new recipe each week and share with you! Please share your favorite recipes, as I am always looking for new ones!
